Lemon Cookies

Ingredients

  • 4080 g – Butter Unsalted Softened
  • 6840 g – White Sugar
  • 105 g – Vanilla Bean Paste
  • 36 – Eggs
  • 102 g – Lemon Zest
  • 534 g – Lemon Juice
  • 7962 g – AP Flour
  • 45 g – Baking Powder
  • 21 g – Baking Soda
  • 45 g – Kosher Salt – Fine

Method

  • In the white mixer with the paddle attachment. Beat together the butter and sugar. Beat until light and fluffy, measure out other ingredients during this time.
  • In a bowl, whisk together the dry ingredients, set aside.
  • Mix in eggs and vanilla bean paste to butter mixture. Do this in tow increments and scape down the bowl.
  • Mix in the dry ingredients to the butter mixture. Make sure to scrape down the bottom of the bowl to make sure there are no lumps.
  • Scoop out the cookies with a slightly heaping red scoop.
  • To bake : 350F for about 11-13 minutes.

Bake Cycle

  • Bake @ 350℉ for 12 Minutes
