Quiche Filling

“Savory Custard” Filling for 20 Quiche

Ingredients

  • 96 – Eggs
  • 90 – Egg Yolk
  • 8640 g – Heavy Cream
  • 2880 g – Whole Milk
  • 144 g – Kosher Salt – Fine

Method

  • Simply combine the ingredients and use emersion blender until it is homogenized, then pass the mixture through a fine mesh sieve.
