Banana Walnut Bread

Ingredients

  • 1620 g – Butter Unsalted
  • 3240 g – White Sugar
  • 2954 g – AP Flour
  • 304 g – Cornstarch
  • 48 g – Cinnamon Ground
  • 190 g – Baking Powder
  • 86 g – Baking Soda
  • 58 g – Kosher Salt – Fine
  • 38 g – Eggs
  • 4700 g – Bananas
  • 254 g – Lemon Juice
  • 38 g – Vanilla Bean Paste
  • 2192 g – Walnuts

Method

  • Grease and line baking pans 9×5 size. Preheat the oven to 315F if you are baking after this recipe is made.
  • In the white stand mixer, attach paddle attachment and cream together butter and sugar. Scrape down sides so that there are no butter clumps. Mix until light in color, while measuring out the other ingredients.
  • Weigh out all the dry ingredients and set aside.
  • Add in the eggs, banana, lemon juice and vanilla bean to the butter and sugar mixture. Mix until incorporated and bananas smash evenly.
  • Add in the dry ingredients. Mix until just combined. Add in walnuts, mix until combined.
  • Scale and tare the 9×5 pan. Add in 3/4″ high of batter to tin and bake for 45-50 minutes at 315F is fresh and check with toothpick that comes out clean. Let cool in tin and dust with powder sugar before serving.

  • Bake @ 315℉ for 45 Minutes
