Lemon Bars

Ingredients

  • 2400 g – Butter Unsalted Very softened 1
  • 2560 g – AP Flour 1
  • 1280 g – Powdered Sugar 1
  • 24 g – Kosher Salt – Fine 1
  • 4800 g – White Sugar 2
  • 800 g – AP Flour 2
  • 64 – Eggs 2
  • 2560 g – Lemon Juice 2

Method

  • Preheat oven 350F and line a 9×13 baking pan.
  • In a bowl, mix together the. Butter, flour, powder sugar, and salt. With your hand, mash it together until it is homogenous. (Your butter must be very soft or else this will be hard to do).
  • Lower the temperature to 300F.
  • In kitchen-aid with a whisk attachment, whisk together the sugar and flour. Whisk in the eggs and lemon juice.
  • Pour the mixture over the crust, then return to the oven at 300F and bake for another 20 minutes just until set.
  • Refrigerate until cooled and set. Cut into 12 pieces outside of pan and dust with powdered sugar.

Bake Cycle

  • Bake @ 300℉ for 20 Minutes
